Choose butcher block if you like a surface that can be maintained and renewed. Skip it if standing water, low maintenance, or a pristine look matters most.

The best parts

Butcher block brings warmth into a kitchen in a way stone rarely does. It is comfortable to touch, easier on dishes, and visually softens white cabinets, painted cabinets, and hard flooring.

It is also repairable. Scratches, light stains, and dry patches can often be sanded and re-oiled instead of replaced. That makes wood forgiving if you accept that maintenance is part of ownership.

The drawbacks
